Colonnata, old hamlet of Roman origins at the heart of the Apuan Alps, has always been known for its marble and lard. Pig farming, favoured by numerous chestnuts, is rooted in far-off times: some evidences are from the Longobards, VII century a.D.

With time the processing of butchered meats has developed, giving birth to the traditional production of the famous Lardo di Colonnata.
